As the leaves begin to fall and the air turns crisp, there’s nothing quite like the comforting warmth of a homemade pie. While pumpkin is the star of many autumn dishes, this pie takes it up a notch by adding the sweet-tart flavors of apples and cranberries. The result? A pie that perfectly balances the richness of pumpkin with the freshness of fruit and the crunch of walnuts.
Why This Pumpkin Pie Stands Out
There are countless ways to make a pumpkin pie, but this recipe strikes the ideal balance of flavors and textures. Should you add ginger? Cinnamon? Which sugar should you use—white or brown? In this recipe, I’ve found the perfect combination: grated apples for a subtle sweetness, cranberries for a hint of tartness, and a homemade cranberry syrup that’s drizzled over the finished pie for an extra layer of flavor.
Ingredients
For the Filling:
- 100 g walnuts
- 2 tbsp cranberries
- 200 g sugar
- 300 g pumpkin
- 2 apples
For the Dough:
- 200 g butter (plus extra for greasing the mold)
- 350 g flour
- 1 tsp vanilla sugar
- 5 eggs
- 10 g baking powder
- ½ tsp salt
For the Cranberry Sauce:
- 380 g cranberries
- 200 g sugar
- 1 sprig rosemary
Step-by-Step Recipe
Step 1: Preheat your oven to 180°C (350°F). Prepare all the ingredients.
Step 2: Peel the pumpkin and cut it into 1 cm cubes.
Step 3: In a large bowl, combine the pumpkin cubes with the walnuts.
Step 4: Grate the apples into the same bowl.
Step 5: Add half of the sugar (100 g) and the vanilla sugar to the pumpkin mixture.
Step 6: Toss in the cranberries for a touch of acidity.
Step 7: In another bowl, cream the softened butter with the remaining sugar (100 g).
Step 8: Beat in the eggs, one at a time, until fully incorporated.
Step 9: Add the baking powder and flour to the butter mixture, mixing until smooth.
Step 10: Fold the filling mixture into the dough until evenly distributed.
Step 11: Line a baking dish with parchment paper and grease it with butter. Pour the batter into the prepared dish.
Step 12: Bake the pie for 1 hour at 180°C (350°F).
Step 13: While the pie bakes, prepare the cranberry sauce. In a saucepan, combine the cranberries, sugar, and rosemary. Cook over high heat for 15 minutes, or until the sauce thickens and the liquid evaporates.
Step 14: Once the pie is done, drizzle the cranberry sauce over the top.
